INGREDIENTS

  • 2 x 5cm Wedges of Watermelon

  • 40g Feta, crumbled

  • Chopped Mint, handful

  • 2 x Wedges of Lime

INSTRUCTION

Take each wedge of melon and slice between the rind and flesh. Separate them out and then cut downwards to make bite-size chunks. Flick out the seeds and dispose of them. Scatter over the feta and mint, and squeeze over the lime before serving.
