INGREDIENTS
4 x Medium Sized Eggs
7 x Cherry Tomatoes, halved
95g Egg Whites
80g Green Bell Pepper
60g Spinach, finally chopped
20g Green Chilli Peppers, finely chopped
15g Cheddar Cheese, grated
1 x Tsp Coconut Oil
1 x Tsp Paprika
1/2 x Tsp Oregano, dried
Rock Salt to season
INSTRUCTION
Preheat the oven to 150º. Lightly grease a large round ovenproof dish with coconut oil. Whisk the eggs and egg whites in a jug. Season well. Add the vegetables, dried spices and herbs. Stir well. Pour into a dish and cook for around 12-15 minutes until the centre of the mixture is cooked.
