INGREDIENTS

  • 500g Lean Beef Mince, 5% Fat

  • 400g Tinned Tomatoes

  • 400g Tinned Kidney Beans, drained

  • 120g Onions, peeled and finely chopped

  • 1/2 Pepper, any colour

  • 60g Chilli Peppers, green

  • 1 heaped tsp Tomato Puree

  • 10g Coconut Oil

  • 3 Garlic Cloves

  • 1 tsp Cayenne Pepper

  • Salt and Pepper to season

INSTRUCTION

Heat the oil in a large pan over a medium heat and add the onion. Gently cook for 1-2 minutes until soft. Add the mince and brown all over. Season well. Add the bell pepper and cook for several minutes until soft. Add the garlic cloves and chilli peppers (if using) and cook for 1 minute. Add the tinned tomatoes, purée and cayenne pepper. Simmer gently for 15-20 minutes. Add the kidney beans and continue to cook for 10 minutes.
